June is National Fresh Fruit and Vegetables Month, and that means taking a look at your daily intake of these healthy and nutritious foods. Most of us want to eat more vegetables but also don’t want plates piled high of bland and tasteless vegetables. Fear not, there are some unique and delicious ways to sneak more vegetables into your diet without feeling like you’re eating them!
Add leafy greens to your smoothies. This one comes as no surprise. Turning your smoothies green has been a popular trend for quite some time. Alongside fruit, protein powder, peanut butter, and almond milk, you can’t taste the leafy greens. Add a couple of handfuls of spinach or kale for good measure!
Use pumpkin puree as a fat replacement. Low in both calories and fat, but high in vitamin A and C, pumpkin makes for an excellent and versatile fat replacement in a variety of baked goods. The ratio is one to one: so 1 cup of oil can be replaced by 1 cup of pumpkin puree. To replace butter, multiply the amount of butter in the recipe by 3/4.
Bulk up burgers. Switch out a beef patty with a black bean, quinoa, or sweet potato patty to get in an abundance of nutrients without sacrificing flavor or taste. Plant-based meats are great alternatives for meat and offer a wide variety of flavors and nutrients.
Make veggie fries. Are you looking for a crunchy snack or side dish? Try oven-baking your veggies into crispy ‘fries’ that are a great addition to any meal.
Add vegetable purees to Mariana sauce. You can get away with adding almost any vegetable into sauces because the spices of the sauce can detract from the fact you’re eating lots of vegetables. Adding vegetables like pumpkin, butternut squash, broccoli, corn, carrots, onion and more also make the sauce less acidic, which is better for your health.
